Scales Bar, Mayfair

Scales, a hidden bar beneath independent London drinks store Drink with Sasha, has opened its doors.

Found between Marylebone and Mayfair in the capital, Scales is the brainchild of bartenders Din Jusufi and Engji Shala, formerly of Farzi London.

Entered through a door in the wine shop, Scales is billed as an “intimate space” with “crafted cocktails”.

The bar's seasonal menus focus on locally sourced ingredients, and pulls on modernist cocktail making techniques with the help of lab-grade equipment.

The Shiso Apple features Desi Daru vodka, shiso leaf, green apple, and bergamot, while Fig combines Camus cognac with figs, citrus, pandan, and almond. Gingerbread is a combination of Tidal rum, gingerbread, coconut milk, walnut, and citrus.

Shala said: “Our ethos revolves around balance, precision and consistency. Each drink follows a pattern of seasonality using fresh produce, expertly extracted into the cocktails. We started the bar in the hopes of bridging the gap of understanding between the consumer and the modern-day crafts of cocktails.”

Scales, on 25 Duke St, London W1U 1DJ, is open Tuesday to Thursday from 4pm - 11pm and Friday & Saturday from 4pm - 12am.
